Two terrific ladies are venturing into a partnership opening Senor Sanchos on the Palm Beach Road. Legal Eagle /singer Diana Emerencia, nicknamed Lady Eyes and Lugina Vilchez who first developed an affinity to restaurants when she helped run La Dolce Vita, still on the main street almost two decades ago. It is there where her passion for restaurants was hatched. As TO Manager with Bluegreen, La Cabana All Suite Beach Resort, Lugina decided to do something for the soul, open her own business, do something she is passionate about.
The new Senor Sanchos, a fusion restaurant with French and Mexican elements replaced Pasion. The restaurant under Frans Sydow and under Reinaldo & Mariuccia Ammadeo was well received in the local community but never enjoyed commercial success, though the décor, the ambiance and the location, are all perfect. Now, with Lugina at the helm, the place certainly holds great promise.
At a preopening tasting this week Executive Chef Maarten Smeets dazzled a few press 
members and friends-of-the-house with his culinary artistry. Young and good-looking Maarten is a master chef. He worked for Senor Sanchos in Europe - Belgium, Holland and England, and is now creating magic in the kitchen in Aruba. Guests tried his yummy house-salad with mushrooms and bacon, his divine roast pork, two types of melt-in-your-mouth ribs, scampi with Pastis and scampi with who-knows-what- it was delicious, sinful meat balls - they are very good, cut-with-a-fork fajita beef, and butter-soft sliced tournedos.
