PALM BEACH – The island’s chic and hip seafood address is Aqua Grill in Palm Beach. Critically praised for its fresh-only philosophy and culinary diversity that brings patrons both regional classic preparations, as well as an exciting contemporary flair to seafood cuisine, Aqua Grill recently earned its second Wine Spectator Award of Excellence for an impressive wine cellar of over 1000 bottles, with a selection from more than 100 different wines.
The elite few restaurants that qualify for this award must meet a variety of standards, most important being their wine selection. Aqua Grill management carefully selects wines with diversity—region- and grape-wise—in mind. Much time is spent researching the reputation of many vineyards, meeting with the restaurant’s wine distributors, and then fine-tuning the list through staff wine tastings, current market trends, and global sales performance.
The wines are stored behind a fourteen-foot tall glass wine wall that doubles as part of the dynamic décor of the restaurant. The temperature-controlled wine cellar has a capacity to hold over 1000 viewed bottles, and all red wines are stored room temperature (70°), while white wines are stored at 50°.
