

Palm Beach – Pepia Est and Mount Gay Rum distilleries from Barbados hosted a number of local dignitaries and press members for dinner at the Divi Phoenix.
The lovely tasting was prepared by Chef Paul Yellin, Mount Gay Rum’s in-house chef, flown in on the occasion from Barbados, the home of Mount Gay Rum.
Chester Brown, Mount Gay Rum’s drink ambassador was on hand to create the best suited cocktails to match the food, making the experience a truly unforgettable one.


Seven different preparations of food all infused with Mount Gay Rum were served by the outstanding wait staff of a Taste of Belgium, under the watchful eye’s of Pepia Est owner Michael v/d Berg and wine & spirit connoisseur Pascal Turpyn.
The lovely dinner menu included a spicy chicken salad w/fresh avocado, mango, feta cheese & beetroot vinaigrette; a tiny cappuccino cup of lobster and pumpkin bisque w/rum whipped crème fraiche; in between course a palate cleanser made of shaved coconut, rum and lemon grass granita w/fresh mint was served.


The main courses included tasty feuilete of red snapper and salmon & Mount Gay spiced cream sauce served w bok choy and crisp onions; an outstanding Banana stuffed jerk chicken w/a coconut curry sauce over grilled asparagus and coriander oil; and the piece de resistance roasted plantain crusted best end of lamb w/ a molasses reduction drizzle escorted by a vegetable spring roll and a tomato-mint salsa.


Dessert featured Mount Gay Barbados XO brownie chocolate fudge served w/rum & raisin ice cream under melted chocolate & toffee.
The evening concluded with gifts for all attendees courtesy of the distilleries.
