Aqua Grill adds further depth to wine list

PALM BEACH - Aqua Grill restaurant, located in Palm Beach adjacent to the Hyatt, boasts one of the island's largest and most diverse wine lists.

Recently, the seafood restaurant, touted by Fodor's as a, ". hip restaurant [that] is heaven on earth for seafood lovers, who will find fresh fish galore and the island's largest raw bar," tweaked their wine selections by replacing and adding some 18 new varieties.

Restaurant Manager Glen Boset explains that Aqua Grill was looking to add more diversity, region- and grape-wise. He, along with General Manager Shirley Barrow-who spent weeks researching the reputation of many vineyards, met with the restaurant's wine distributors to narrow the list down through staff wine tastings, current market trends, and global sales performance.

First on Aqua Grill management's wish list was a new house wine. A chardonnay and cabernet were selected from Colon, and Argentinean vineyard.

"I think guests will be pleasantly surprised by the quality of this house wine.the grapes come from a region in Argentina about 100km above Mendoza," informed Glen.

Three additional red wines available by the glass were added, along with several bottle selections of fume blanc, three California chardonnays, a fruity white Riesling from Montery County, an Australian shiraz, four merlots, four cabernets, and three innovative reds, including Achaval Ferrer Quimera Argentina 2002, which scored a 94 from Wine Spectator. In fact, Aqua Grill has included six selections on the wine list with ratings over 90 from Wine Spectator.

"There's always something new and exciting in wines, and we will continue to modify our wine selections to make sure that our guests have a diverse list to choose from," said Glen.
