If Thomas' last name rings a bell, its with good reason. His dad is celebrated chef Matt Boland of Sunset Grille fame and more recently as Executive Chef at the Westin Aruba. But enough about Matt, son Thomas is really making things fly at the ostrich farm, coming up with different takes on several dishes such as the traditional Dutch pea soup, served in a cactus bowl.
